I love brunch. But my brunch is really breakfast because I don’t like savory items like biscuits and gravy or eggs or quiche, the list goes on. I’m a pancakes, french toast, or waffles fan. Where do buttermilk biscuits fit in? Biscuits and strawberry jam, that’s where. No need for eggs, bacon, or cheese on a biscuit, just some jam baby.
I used Amanda Freitag’s recipe from her new cookbook The Chef Next Door. The biscuit recipe is in the Scary Stuff section and biscuits can be intimidating. I wanted to make sure they weren’t hockey pucks and were still fluffy on the inside when warm. Her recipe is not low calorie or low fat but with biscuits you want the goodness and that means all of the butter. No regrets when eating these biscuits because your tummy is dancing on the inside!
