Hi there! Happy Wednesday!
I know I’ve been MIA for the past week or so and I apologize! I’ve been trying to get back to my normal self and after an appointment with a specialist I’ve found out that my gut is still healing from the nasty infection I had in October. Still! Crazy, right?! Who knew it would take this long. BUT on the bright side the doctor is very confident I’ll be back to normal in 30 days and we’ll shake hands and not see each other on a regular basis. Cheers to that!
So how’s January been treating you? It’s still much colder than I would prefer which means our snow won’t melt for another 5 months but I’ve been working to stay warm and not get cabin fever. I purchased a new winter coat (on sale) and will share that with you later- it’s an interesting story. I’ve also been doing Pilates more often until the weather warms up for running. Mike and I signed up for the Rock N Sole quarter marathon again this year but I’m glad it’s not until June, this way my training doesn’t start during the bitter cold.
Otherwise I’ve been keeping warm with bubble baths and delicious home cooked meals like Lemon Butter Chicken from Damn Delicious. Mike was wonderful and cooked this for dinner last night while I took a relaxing bubble bath after work. Why didn’t I do this last year?? But anyways, we’ve had trouble cooking with chicken thighs before but this recipe turned out perfectly. We both enjoyed it and I can’t wait for the leftovers!
BTW- less than 8 months until our wedding!! :)
