It’s been a busy week for me and I can’t wait to sleep in this weekend! I tried a new recipe this week: spaghetti alla carbonara but the recipe needs some tweaking before it’s worthy of posting for y’all to make. But I did try a very successful recipe tonight and that was blackened salmon! I’ve never made blackened salmon before and was a little nervous but it turns it, it’s super easy to do! Mike, who isn’t a huge salmon fan, said he would eat it for dinner sometime, yay! ;)
So if you’re brave enough to try blackened salmon, here’s the recipe:
1 Tbsp butter
1. Let salmon rest for 30 minutes before cooking. Preheat oven to 400 degrees F.
2. Mix spices in a shallow dish. Since I only cooked one piece of salmon I only used as much spice as I thought I would need. I eyeballed, shocking because I usually measure everything! You want enough spice to coat the top of the salmon.
3. Melt 1 tablespoon of butter in a skillet or oven safe pan such as a cast iron skillet. Sear the salmon for 5 minutes. Turn salmon skin side down and place in the oven for 10 minutes, this is where the cast iron skillet comes in handy.
4. After ten minutes let salmon rest for about 5 minutes and then enjoy!
